This past week I ventured out and created 2 homemade dishes. One of them was turkey burgers, cooked on a skillet (I got the idea from Leann:) and my second adventure was stuffed chicken.
Now, I wouldn't say I'm an experienced cook, but I've tried a few time here and there. I would say I'm an amateur. And I haven't cut many onions in my lifetime, but I think red onions are worse than white onions. The red ones were makin me ball, so I found a solution. I'm sure goggles would be better, but I did what I could, and cut as fast as I could.
The mixture: spinach, cheese, mayo, garlic, & red onion.
This was my first time to butterfly chicken. My second one turned out so much better than the first one. The trick is to cut down the middle (but not all the way through) and then cut slits inside the chicken and on both sides. Makes perfect sense right???
I sprinkled some parmesan herb seasoning on the chicken. I also added some red pepper seasoning on the spinach to make it look pretty.
It was a feast!!! Next time, I know not to do as much mayo. And the leftovers were so good with Ritz crackers! It was like spinach dip!
